- You need 1 pack (24 ounce) of hot Italian sausage.
- It’s of Olive oil.
- You need 3 of red peppers, sliced.
- Prepare 2 of yellow onions, sliced.
- It’s 2 packs (16 ounce) of sliced mushrooms.
- It’s 1/8 teaspoon of black pepper.
- It’s 1 tablespoon of garlic powder.
- You need 1 tablespoon of Italian seasoning.
- Prepare 1 can (14.5 ounce) of diced tomatoes, undrained.

I also threw in some fresh sliced mushrooms and roma tomatoes. I did not add the tomatoes until just after I threw the sausage back in the pan. - Heat a small amount of olive oil in a large pot……….
- Add to olive oil your pack of hot Italian sausages, cook until sausages are browned……
- Add to sausages your sliced red peppers and onions, turn sausages occasionally and cook until veggies are tender…… you can put a lid on your pot so veggies can cook completely, I left my lid halfway opened while I was cooking them…….😉.
- Add to pot your sliced mushrooms, continue to cook until mushrooms are tender……
- Next add in your black pepper, garlic powder and Italian seasoning, sauté for several minutes………
- Now add to pot your undrained diced tomatoes and bring to a boil…….
- Cover slightly and cook on medium/ high heat for 30 minutes, stirring occasionally……..
