  3. You need of Seasonings of choice – salt, pepper, vinegar, fajita spice mix..

  1. Preheat the oven to gas 6 / 200C / 400F and ready an oven tray (or 2).
  2. Make sure you wash and scrub the potatoes before you peel them!.
  3. Put on an even layer on the oven tray and drizzle with a little bit of oil, just enough to coat thinly. Add in your favourite herbs and spices or simply sprinkle with salt and toss together.
  4. Roast for 25 – 30 mins until crispy.
  5. Blot any excess oil away with kitchen towel then serve!.
