  1. Grate the courgettes and place in a colander. Sprinkle with a little salt, mix and let it drain for 10-15 mins to draw the water out.
  2. Squeeze the courgettes between your hands and drain as much water as possible and place in a bowl.

  7. Place in the air-fryer on 180°C for 15-20 minutes.
  8. Serve warm with a tomato salad and some tzatziki.
