- You need 170 g of mixed dry fruit.
- Prepare 10 of x glace cherries (chopped).
- Prepare 300 ml of Tea (cold).
- Prepare 250 g of self raising flour.
- Prepare 1 tsp of baking powder.
- It’s 100 g of granulated sugar.
- You need 2 of x medium eggs.
Healthy tea loaf! instructions
- Preheat oven 180c (fan) prepare a 2lb loaf tin.
- Place all fruit in a bowl and pour cold tea over, leave all to soak for 1 hour.
- Add flour,baking powder, sugar and eggs to the soaked ingredients…..
- Beat (hand mixer) until smooth and mixed (dont over mix).
- Pour into prepared tin and bake on middle shelf for 35-40min until skewer comes out clean.
- Allow to cool for 10 minutes, lasts for 5 days stored..
